Have You Guessed?

So, I’m sure you are asking, “what in the world did you do with all that cake?” All in good time, my friends. Do you have any guesses?

We have been super excited to have our Wednesday Bible study time again with our Vida Nueva children that live here in Parras! There are three (siblings: Romina, Cristopher, and Marvin) that we have had over for the last two weeks to play, eat supper, and have Bible study. Two weeks ago they brought their little sister and last week Romina brought her new friend and next door neighbor, Elena (she prefers to be called Helen). We love being able to have this time again, and the kids really missed it too. Right before the town locked down, they were all asking Adam if he could still pick them up from their homes every week for Bible study. Unfortunately, we’ve been unable to do that, until now.

This time is a little bit different, simply because these three are the youngest kids at Vida Nueva, and as mentioned sometimes their younger siblings come, as well. We are so privileged to have a subscription to RightNow Media through our home church. Last week we started watching SuperBook (in Spanish) with the kids. Then having a short discussion afterward. Nothing too crazy, and it kept their attention really well!

We are really excited to teach the kids some life skills during this time as well! Adam is planning to teach them how to change the oil in a motorcycle on Wednesday. They were all very excited to learn, and when our Pastor found out, he was excited and is coming too! Last week we used all that cake and leftover frosting to make, have you guessed yet? Cake “truffles”! They are pretty much cake pops without the sticks. The kids, including my Chloe-girl, were so excited to make balls and roll them in colorful sprinkles. They turned out super cute! I have a gallon bag almost two-thirds full in the freezer for the kids to take home with them on Wednesday. They ate so many ham and egg burritos last week that they couldn’t eat anything else!

Making Cake Truffles

Do y’all have any suggestions for easy recipes to feed a crowd, other than cake pop truffles?

Cake Truffles or Cake Pops are super easy to make, by the way. You just need any flavor of cake, crumbled, any flavor of frosting, and something to roll them in (melted chocolate, sprinkles, chopped nuts, colored sugar, coconut, etc.). Mix the crumbled cake with frosting a little at a time, until it’s really dense and clumps together really well. I honestly just eyeballed it. Roll into balls and then roll the balls in your topping of choice. Refrigerate or freeze to keep.
